Frittata

Frittata is such an easy yet amazing way to elevate the simple egg. Lots of veggies add so much nutrition and you can really mix it up to suit you.

Ingredients

  • 8 large eggs
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 3 garlic cloves minced
  • 1 cup of broccoli roughly chopped
  • ½ onion chopped
  • 3 spring onions finely chopped
  • 8 rashers of bacon chopped (optional - fat removed) 

Other ideas of veggies:

  • ½  red pepper chopped
  • ½  courgette chopped
  • 2 cups of spinach (added after veggies are cooked but before eggs)

Instructions

Step 1

Preheat oven to 170°C.

Step 2

Lightly whisk your eggs in a bowl and season with salt and pepper.

Step 3

In a large pan, heat the oil, and then add your veggies and bacon (if using).

Step 4

Cook for about 5 minutes, stirring frequently.

Step 5

Pour the eggs over the veggies and cook in the oven for about 20 minutes.

Step 6

You want it to look fluffy but firm.
